Wanting to cut down on fast carbohydrates such as potatoes, pasta, and white rice, a substitute was needed.  Let’s face it, carbs do satisfy a person’s hunger (temporarily) and fill a void on a dinner plate.  Try red quinoa! Quinoa is known as the ‘mother grain’, along with corn and early potatoes.  Quinoa was a staple of the ancient Incans and is still a major food source of the Andean region of South America.  Quinoa has more protein than any other grain. In addition it contains all eight essential amino acids, making it a complete protein. Quinoa is gluten free. Quinoa is an excellent choice for those who are allergic to wheat, corn, or just want to eliminate some wheat from their diet. Quinoa comes as yellow quinoa, white quinoa, and others, but red quinoa just looks so much more appealing!  Try it.  You will feel satisfied longer.  You won’t spike your blood sugar with quinoa as you may with other carbohydrates.
