mini pieMini pumpkin pies are perfect anytime! They are quick, easy, and delicious, and yes they are too cute to resist popping one into your mouth. Trust me, i know. These little pies are made with mini fillo shells which are made from flaky layers of phyllo dough. You can find them in the frozen food section of your market. They usually come 15 in a box. These little pies are perfect for a dessert table and look so sweet on a saucer holding your favorite cup of tea or coffee. Kids love them too and there is little waste, and zero mess! But really they are perfect for you! The little one-bite pie is a guilt-free indulgence!

1 box of 15 fillo mini shells, thawed at room temperature

3/4 cup pumpkin puree

1 egg

mini pie 22 tablespoon half & half

1-tablespoon brown sugar

¼ teaspoon cinnamon

¼ teaspoon freshly grated nutmeg

 

Mix pumpkin, half & half and spices. Beat egg and whisk into pumpkin mixture. Fill mini fillo shells and bake 10 minutes in a 375 degree oven. The pumpkin filling will continue to set as it cools.
