flour scoopBoxed baking mixes are convenient for biscuits, cobblers, pancakes,  dumplings and coffee cakes and a host of other delicious foods. I am often a bit disturbed when I open a flimsy, cardboard box of the mix and their is no liner protecting the ingredients. Making your own eliminates that plus it is so much less expensive. A purchased box of Bisquick or other similar mixes is about $4 for 40 ounces. Making your own is much, much, less expensive. For me knowing what is in the mix, where it came from, and saving money if a big deal. Try making your own. My recipe results in about 38 ounces of mix. I keep it in the refrigerator and it lasts for up to three months. Separate the mix into one-cup portions and freeze and it will last even longer. I shared the recipe with my friend who loves to eat and cook organically and she can choose organic ingredients and make her own perfect, organic, baking mix. Try any of the recipes below, or try my easy Quiche. The recipe has this baking mix right in the mixture and the crust forms magically all by itself. It is delicious!

 

Baking Mix

4 1/2 cup all-purpose flour

1/2 cup dry milk

coco cook doe2 1/2 tablespoons baking powder

4 tablespoons granulated sugar

1 1/2 teaspoon salt

1/2 cup vegetable shortening

 

In a food process add the dry ingredients. Cut the vegetable shortening into small pieces and add to the processor. Pulse until all the shortening in incorporated. Store in a zipper bag in the refrigerator.  You can also do this by hand. Add half the dry ingredients to a large bowl.  With a fork or pastry blender work in the shortening until the mixture resembles course sand. Slowly mix in the remaining dry ingredients.

 

Baking Mix Easy Biscuits

2 cups baking mix

3/4 cup milk

Preheat your oven to 400˚. Mix ingredients with a fork until a soft dough forms. Your batter will be a bit lumpy. Knead the dough on a floured surface gently, about 10 – 12 times. Do not over-knead. Roll the dough out and cut with a f2-inch floured cutter or glass. Place on an ungreased baking sheet and bake 10 minutes.

2-cups baking mix

1 egg

1 to 1 1/3 cup milk

Mix and you are ready for pancakes or waffles.
